Dog Gingerbread Cookies

Best Friends Gingerbread Cookies (wheat free- suitable for dogs and their human friends)

3 c gluten free flour (I used 1c almond meal plus  2c. Trader’ Joe’s GF flour)

3/4 c. coconut flour

1/4 c. ground flaxseed

2 teaspoons ginger

1+1/2 teaspoons cinnamon

1 teaspoon nutmeg

1/2 tsp. ground cloves

1/4 tsp salt

1 tsp. baking soda

1/4 cup molasses or maple syrup

1/4 c. coconut oil

1 egg

2 tsp. vanilla extract

 

In a large bowl, combine the almond meal/gluten free flour, coconut flour, ground flaxseed, ginger, cinnamon, cloves, nutmeg, salt, and baking soda.

In a separate small bowl, combine the coconut oil, molasses (or maple syrup), egg, and vanilla. Whisk until smooth. Pour into the dry ingredient mixture and mix until well blended. Divide the dough into 2 discs and cover in plastic wrap (or in a bowl with a cover) and refrigerate 1 hour.

Gingerbread cookies

Preheat oven to 350F. Line 2 baking sheets with parchment paper or silicone nonstick sheets.

Between 2 sheets of waxed or parchment paper, roll out each disc of the dough to 1/2″ thickness and cut into desired shapes with cookie cutters dipped in water. Place cookies on the baking sheets and bake for 12 minutes or until lightly browned.  Cool on the baking pan for 2 minutes then remove cookies to a rack to complete cooling.

Makes about 4 dozen small dog cookies.
