Love me some chocolate chip cookies, especially when they are healthy!
I could not resist one more pumpkin cookie recipe. It may be hard to find pumpkin this time of the year but these cookies are worth the effort! I made them bite sized for an afternoon treat!

- 2 cups almond flour
- 1 1/2 cups rolled oats (I used gluten free)
- 1 cup shredded coconut
- 2 tsp cinnamon
- 1/2 tsp salt
- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 1/2 cup melted coconut oil
- Optional: 1/2 cup chocolate chips, walnuts, raisins or chopped dates
Pre-heat oven to 350 degrees and place parchment paper on two cookie sheets.
In large bowl, mix all of the dry ingredients: almond flour, oats, coconut, cinnamon, salt and optional additions and stir.
In small bowl, mix all the wet ingredients: pumpkin, syrup, and melted oil and stir.
Combine the two bowls and stir everything together.
Spoon cookie dough onto the cookie sheet and gently press. I didn’t find that the cookies spread while baking so you should be able to place the close together.
Bake on 350 degrees for 25 minutes. (as you can see, I left mine in a little too long!)
Makes 20+ cookies depending on the size. Let cool and enjoy!
**You can share these with your dog IF you don’t add chocolate!
