Dog Treats: PB and Pumpkin

Peanut Butter Pumpkin Dog Treats (also suitable to share with humans)

1/2 C pumpkin

1/2 C crunchy peanut butter

1 Tbsp. honey

2 Tbsp. oil

1/3 c. rice milk or water

2/3 C. rolled oats

3 c. gluten free flour (I use Trader Joe’s)

1/3 c. almond meal

1 tsp. baking powder

Preheat oven to 250 F.

Mix together the wet ingredients (pumpkin, PB, hney, oil, milk or water) in a small bowl. Mix together the dry ingredients in a separate larger bowl (oats, flour, almond meal, baking powder). Dump the wet ingredients into the dry ingredients, and mix until a stiff dough forms- add more GF flour if the dough is sticky, or add more water if the dough seems dry and crumbly.

Roll out the dough on waxed paper or parchment paper to 1/4″ thick. Cut into cookie shapes. Bake at 250 F for 1 hour in the middle rack. Turn off the oven and let the cookies stay in the oven overnight. Store at room temp for a week or refrigerate to store for up to a month.

Makes about 2 dozen cookies.
