
Thanksgiving Turkey Gobblers
(You can make these with all those little scraps off the leftover turkey-
Makes about 2 doz cookies)
1 c. turkey scraps, chopped fine (or ground turkey, cooked)
2 c. flour (I use Bob’s Red Mill gluten free, or a combination of brown rice & buckwheat flour)
1 c. cornmeal
1 egg
3 Tablespoons vegetable oil
3/4 c. water
2 teaspoons tarragon
Preheat oven to 375 F. Combine flour and cornmeal in a large bowl. In a separate bowl, combine egg, water, oil and tarragon. Beat well. Add dry ingredients to the wet ingredient and mix well. Fold in the turkey and mix again. Turn out onto a lightly floured surface and knead until everything is thoroughly mixed together. Roll dough to 1/2 inch thickness. Cut into desired shapes. Place on a greased baking sheet and bake at 375F for approx. 15 min. Cool and serve. Refrigerate any leftovers.
