Love me some chocolate chip cookies, especially when they are healthy!  I could not resist one more pumpkin cookie recipe.  It may be hard to find pumpkin this time of the year but these cookies are worth the effort!   I made them bite sized for an afternoon treat!  2 cups almond flour 1 1/2 cups rolled oats (I used gluten free) 1 cup shredded coconut 2 tsp cinnamon 1/2 tsp salt 1 cup pumpkin puree 1/2 cup maple syrup 1/2 cup melted coconut oil Optional:  1/2 cup chocolate chips, walnuts, raisins or chopped dates   Pre-heat oven to 350

Well it is October so time for some new healthy pumpkin recipes.  Everyone knows that I love me some pumpkin! I like to have healthy cookies on hand so I have something to munch on when I want something sweet!
